Video recipe: Mango tomato salsa

1 cup mango, peeled, finely diced
2 plum tomatoes, finely diced
2 Tbsp. red onion, minced
1 tsp. serrano or jalapeno chile, minced
1 Tbsp. lime juice, freshly squeezed
1/2 tsp. sugar
1/2 tsp. rice wine vinegar, unseasoned
1 Tbsp. cilantro, fresh, chopped
2 tsp. mint, fresh, chopped
Salt and freshly ground pepper, to taste

1. In a serving bowl add mango, tomatoes, onion and chile and gently toss to mix.

2. Add lime, sugar, vinegar, cilantro, mint, salt and pepper. Gently stir mixture to combine well. Serve at room temperature.

Makes 3 servings.
